What are lentils?

Lentils are edible pulses and are part of the legume family. They can be considered a distant family member of the beans, peas and peanuts. It is thought that they originate from India. Lentils are known for their lense-shaped seeds. Lentils do not need soaking before cooking. Whole lentils are good for cold or hot dishes and can be made into soups and stews. There are different types of Lentils, mainly characterised by their different colours. The main colours are yellow, red, brown, green and Puy Lentils (the last ones originating from France).

The actual Lentils are the seeds that are being traded after they have been dried. In order to grow Lentils, a lot of warmth is needed so they are most commonly seen in the Meditarenean and in India.

Canned Lentils are available and the nutritional content remains the same whether canned or prepared fresh (but of course be careful with other added ingredients like salt, sugar etc).

Lentils are a healthy option for weight loss diet because they are filling while being low in calories.

Cooking Lentils

Lentils need no pre-soaking. Simply pick over to remove debris (which shouldn't be there if you buy good quality) rinse and drain! Cover the lentils with water or stock and let it cook for 2-3 minutes. Reduce heat and let them simmer until they are soft and tender (as per your own preference - it might be good to taste a couple before you decide to take them off the fire). Most lentils will need 30 - 45 minutes to cook, but depending on variety and age they can take from 10 minutes to 1 hour.
