Sunday Afternoon, Shops were closed, fridge was empty and friends called unexpectedly for a picknick in the city park nearby... This most simple lentil salad of all helped us out!

 

We ended up having a lovely sunday afternoon in the park - we had our Lentil Salad with some champagne - lovely!

 

 

 

 

 

Preparation

 

1. Rinse the Lentils and bring them to the boil in a pan. Simmer for 30-40 minutes (depending on your preference let simmer longer for softer lentils). Add the Edamame Soy Beans and cook them during the last 5 minutes with the Lentils.

 

2. Cut the Garlic (they will be added raw, so make sure they are chopped to very fine pieces).

 

3. Chop the Parsely Leaves.

 

4. Drain the Lentils and Edamame Soy Beans.

 

5. Add the chopped Garlic, Olive Oil and Parsely leaves. Squeeze in a bit of Lime juice, add pepper and salt to taste and give a good toss! Ready!

 

Can be eaten warm or cold.

 

 

 

 

 

Ingredients (serves 4):

 

* 225 gram Brown Lentils

* Handful of Edamame Soy Beans

* 6 Garlic Cloves

* Tablespoon of Olive Oil

* Squeeze of Lime Juice

* Salt & Pepper
