Red Onion and Feta Salad







One of the classic ingredients in Lentil Salads is Feta cheese. Somehow the taste just goes very well together with that of the Lentils. I once had this dish when I was on holidays in Crete. We had hired scooters and were driving into the mountains. When we reached a plateau there were a couple of villages and we decided to have lunch. This recipe was served as a side dish. So simple yet so good!


Serve cold.






1. Rinse the Lentils and bring them to the boil in a pan. Simmer for 20-25 minutes (depending on your preference let simmer longer for softer lentils). Rinse with cold water.


2. Chop the red Onion into thin slices and break the feta into crumbles. Chop the Parsely.


3. For the dressing, add the olive oil and the lemon juice to the vinager and add these to the lentils.


4. Add Salt and Pepper to taste

* 300 gram Green Lentils

* 150 gram Feta cheese

* Squeeze of Lemon Juice

* 1/4 cup of Olive Oil

* 1 tablespoon red wine vinegar

* Hand full of chopped Parsley

* Pepper and Salt
