Lentil and Lemon Soup

 

I served this when my cousin visited us on our holidays in a summer home on Sweden's West Coast. This Lentil soup is refreshing with fantastic tones of cumin! Quite a distinctive taste... It goes very well as an apperative before eating for example Dilpotatis med Sil (Dille Potatoes and Herring; a typical Swedish Dish). Serve with a sparkling desert wine.

 

Preparation

 

1. Saute the Onion and the Celery for a couple of minutes in the pan

 

2. Lower the heat and add the lentils, stock, lemon zest and juice, the cumin and the salt and pepper.

 

3. Add the pepper and let simmer for another 30 mins

 

4. Serve hot sprinkled with parsely or chives

Ingredients (serves 4)

 

* 100gr Red Lentils

* Olive Oil

* Celery, 2 chopped sticks

* 1 chopped Onion

* 1 Liter of Vegetable Stock

* 1 sliced yellow Pepper

* Grated Zest and Juice of 1 Lemon

* 1/4 tablespoon of ground Cumin

* Salt and Pepper to taste
