A hearty and healthy soup that all will love. An definite familiy favourite!
1. Combine the bacon, onions and carrots in a pan on medium heat and stir occassionally for about 10 minutes. The vegetables should have softened and the bacon should have turned golden.
2. Add the lentils to the pan as well as the tomatoes and the stock cube and add 1.5 liters of boiling water.
3. Bring to the boil and simmer the soup for about 1 hour.
4. Puree the soup a little bit with a mixer. Add the parsley and seasoning to taste.
Serve with Crusty Bread or Croutons.
