Lentil Salad with Lemon, Feta and Basil

 

 

 

 

 

 

I'm not going to say much about this dish other than:v Simple - Basic - Lovely!

 

 

 

 

 

Preparation

 

1. Rinse the Lentils and bring them to the boil in a pan. Simmer for 20-25 minutes (depending on your preference let simmer longer for softer lentils). Rinse with cold water.

 

2. Mix the the ingredients together in a bowl and enjoy!

 

3. Add Salt and Pepper to taste

 

Serve on a sandwhich or with a soup.

* 300 gram Green Lentils

* 150 gram Feta cheese

* Squeeze of Lemon Juice

* 1/4 cup of Olive Oil

* Handful of Basil leaves

* Pepper and Salt
